Starters & to start: Japanese milk bread with miso butter, chu-toro cigar with caviar, oysters with mandarin–yuzu and cucumber–shishito salsa, spicy tuna & king crab tartare, wagyu negi skewer with wasabi, rock shrimp with gochujang mayonnaise, black cod lettuce wraps with yuzu miso.
Fish & Land: Black cod with miso–myoga, garlic lobster with XO and creamy lobster sauce, whole baby turbot with beurre blanc–dashi, lamb chops chili glazed, miso spring chicken.
Meat: Wagyu A5 Gunma tenderloin, ribeye with galbi sauce, spicy beef tenderloin.
