Restaurant De Willem is a French-Asian fine-dining restaurant in Amsterdam, tucked inside the monumental Haarlemmerpoort city gate. Chef Jef van den Hout and his team serve a refined, seasonal menu built around Dutch ingredients.

The dining room has a warm, intimate atmosphere and opens onto a canal-side terrace. Guests can choose à la carte or the chef's multi-course tasting menu, with an optional wine pairing drawn from the restaurant's extensive cellar.

The chef's menu changes with the seasons. A recent tasting menu included:

  • Sea bass ceviche with passion fruit, roasted corn, shiso and jalapeño
  • Seared entrecôte with celeriac, sauerkraut, pickled onions, Limburg zuurvlees (braised beef stew) and jus
  • Choux bun with yoghurt ice cream, pear and butterscotch

Both à la carte and a 4- or 5-course chef's menu are available, with an optional wine pairing.
