Chez Chloé is a modern French fine-dining restaurant on the Overtoom in Amsterdam, opened in April 2026. The concept pairs classical French technique with a contemporary signature — recognisable flavours, surprising in execution — while keeping the atmosphere relaxed enough to invite long evenings at the table.
The kitchen is led by chef Marcelo Hernandez, Amsterdam-born and classically French-trained, alongside maître Rutger Bogers and entrepreneur Matthijs van Stapele. Signature plates include confit halibut with yuzu kosho sabayon, kohlrabi and tarragon oil, and bavette tartare with porcini, daikon and seaweed. Vegetables carry real weight on the menu — stuffed morels in a rich cider sauce among them — making it a genuine option for vegetarian guests.
Wine is central rather than incidental. The list runs to more than 250 French references, composed by sommelier Tim Palacios: classics from Burgundy, the Loire, Jura, Bordeaux and Chablis alongside a new generation of natural-wine makers. A transparent climate cabinet forms the visual centrepiece of the room, and the Chloé Cave Privé list offers rare and iconic bottles from the cellar.
The interior reads as French art deco meets boutique-hotel chic — half-round banquettes in soft green, gold climate cabinets, white-and-deep-red veined Italian marble and warm, low lighting. With 54 covers and a genuinely intimate atmosphere, Chez Chloé suits high-end incentive dinners, board dinners and small private celebrations.
